For 80 years, Pastora’s Palabok, also known as Boet and Mayer, has drawn diners from across different cities to Quiapo, Manila, for its signature pancit palabok. The dish is coated in a rich, flavorful sauce mixed with shrimp and pork, and topped with tofu, chicharon bits, boiled egg, and squid.
